  • Would dry ageing work better for a cheap cut with higher fat content (round is usually realatively lean)? Such as chuck, plus then wouldn't it would break down the connective tissue, which is one of the reasons chuck is cheap.

  • COMBINE TWO VIDEOS???. Round cut marinated in pineapple for 2hrs then you inject some of that wagyu fat in it???? Since bromelain takes apart the proteins and relaxes the meat, the juices flow better, but by adding something like wagyu fat, it would mean even more juicyness plus the wagyu fatty acid taste, and because of the bromelain, the wagyu fat taste will spread throughout the entire steak. You can also maybe dry age it before or after the pineapple???
